Taking a bite into one of Wes and Jaunita Melling's juicy heirloom tomatoes (which they are always happy to sample out should you find them at the market or visit their greenhouse) and you'll experience a gush of bright, earthy flavors. But those flavors don't come from the "earth" at all if we're talking soil- everything grown inside the greenhouse is entirely hydroponic- grown primarily with water! A complicated tubing system is rigged to supply minerals and "feed' the plants according to a computerized schedule, which control temperature and humidity within the environment. Other familiar garden fare can be found, like gloves, tools and trellises, sans dirt. Unique to this process is the growing season- starting the November and ending in July- which is a boon to nearby restaurants and local residents looking to get their tomato fix "off-season".
