Pickled fennel, a delicacy from Atlanta-based Doux South Pickles, impart a hint of exotic sweetness to this collection of autumn flavors. A sweet Dijon dressing unites the apple and radishes, while seasoned sunflower seeds add crunch.

MISE EN PLACE
• Quarter radish lengthwise. Thinly slice crosswise.
• Quarter and core apple. Thinly slice crosswise. Cover with fennel brine.
• Thinly slice fennel.
• Cut or tear lettuce into bite-size pieces.
• Halve and thinly slice carrot.
Place a sauté pan over medium heat. Add 1 teaspoon olive oil. When oil is hot, add sunflower seeds, PeachDish Seasoning and 1/4 teaspoon PeachDish Salt. Cook, tossing, until seeds are lightly toasted, about 2 minutes.
In a large bowl, whisk together 1 tablespoon fennel brine, mustard, chia seeds, sugar, 1/4 teaspoon PeachDish Salt and 2 tablespoons olive oil.
Add lettuce, radish, carrot and fennel. Toss to coat.
• Divide salad between 2 plates.
• Top with apple and sunflower seeds.
• Serve with rolls, and enjoy!
