Cheyenne Lodge Colorado Chili
A basic chili doesn’t need any fancy ingredients or techniques to be tasty – just the right balance of grass-fed beef, beans, tomatoes and a bold combination of seasonings that imbues each bowl with spicy, smoky, satisfying flavors. Seasonal veggies like sweet corn, summer squash and bell pepper, as well as fresh jalapeño for heat, kick the flavor up a notch while adding color to the pot. Top your bowl with cool sour cream and chopped green onion (and homemade pickled jalapeños, if you’ve got ‘em) and enjoy! Adapted from Spirit of the West, by Sarah Anschutz Hunt.
