METHOD

Place a saucepan over medium-high heat. Add 1 1/2 cups water and nutritional yeast.

MISE EN PLACE • Dice ham. • Pick and chop thyme leaves. • Pick and chop parsley leaves.

• When water boils, add pasta. Liquid should just cover pasta (if not, add more water, but no more than necessary). • Reduce heat. Cover, and simmer until pasta begins to turn tender, about 6 minutes.

Stir in peas. Cover, and simmer until peas are tender and pasta is al dente, about 4 minutes. (Most of the liquid will have cooked away.)

Stir in ham. Simmer uncovered until ham is warmed through, about 1 minute.

Fold in Parmesan, mustard, sour cream, parsley and thyme.

Season to taste with hot sauce and plenty of pepper. Divide between 2 bowls, and enjoy!
