METHOD

Place a medium saucepan over high heat. Fill half full with about 6 cups water and 1 teaspoon kosher salt.

MISE EN PLACE • Peel and mince garlic. • Halve or quarter turnips. • Finely chop greens stems. Thinly slice leaves. • Zest, halve and juice lemon. • Flake or chop salmon.

• When water boils, add pasta. Cook, stirring occasionally, until pasta is tender but not mushy, about 9 minutes. • Reserve 1/4 cup cooking liquid. Drain pasta.

Place a skillet over low heat. Add 2 tablespoons olive oil, garlic and 1/4 teaspoon kosher salt. Cook, stirring, until garlic is fragrant, 30-60 seconds.

Add turnips, stems, greens and 2 tablespoons water. Increase heat to medium. Cover and cook, stirring occasionally, until turnips are tender, 7-9 minutes.

Add salmon to skillet.

Toss in pasta and cooking water.

Add half of lemon zest and half of juice. Taste and adjust seasoning as desired with kosher salt, black pepper and remaining lemon.

Serve pasta in shallow bowls, and enjoy!
