METHOD

Heat oven to 375° F. MISE EN PLACE • Peel sweet potato, and cut into 3/4-inch chunks. • Peel and finely chop shallot. • Pick thyme leaves.

• On a baking sheet, drizzle sweet potato with 1 teaspoon olive oil. Toss to coat, and spread in single layer. • Roast until tender and golden on the edges, 20 to 25 minutes.

• While potatoes roast, in a small saucepan, bring 2 cups water and 1/2 teaspoon kosher salt to boil. • Stir in lentils. Reduce heat, cover, and simmer until tender, about 15 minutes.

Meanwhile, in a small bowl, whisk together shallot, vinegar and mustard.

• In small saucepan over medium heat, melt butter. Cook, swirling pan occasionally, until golden brown with strong toasted aroma, about 2 minutes. • Remove from heat and whisk in vinegar mixture.

• Drain away any remaining liquid from lentils. Pour into large bowl. • Stir in browned butter vinaigrette.

Gently stir in sweet potatoes, thyme and walnuts. Season to taste with kosher salt.

• Divide lentil mixture between 2 bowls. • Scatter goat cheese over top, and enjoy!
