METHOD

MISE EN PLACE Peel and mince shallot. Discard any tough stems from mushrooms; dice tender stems and caps. Pick and chop oregano leaves. Split buns. Halve onion; peel and finely chop enough for about 1/4 cup onion (save any extra for another use).

Place a skillet over medium high heat. When hot, add 1/2 teaspoon olive oil and shallot. Cook until shallot is soft, 1 -2 minutes. Add mushrooms, and cook until they soften, 5 - 6 minutes. Remove from heat to cool.

In a small bowl, stir together mayonnaise, mustard, curry powder and 1/8 teaspoon black pepper. Set aside.

In a large bowl, combine turkey, measured onion, mushroom mixture, oregano, 1/4 teaspoon kosher salt and 1/4 teaspoon black pepper. Divide and form mixture into 2 patties, making the sides slightly thicker than the middle.

Place the skillet over medium heat. When hot, drizzle with 1/2 teaspoon olive oil. Add burgers and cook 8 minutes. Flip and cook until burgers are no longer pink in the center but still moist, about 6 minutes more.

While burgers are cooking, heat or toast buns as desired.

In a large bowl, dress all but a few spicy greens as desired with Sweet Garlic dressing.

Spread buns with curry-mustard sauce, and assemble with patties and reserved spicy greens. Serve with salad on the side, and enjoy!
