In a small saucepan with a lid, combine multigrain blend, 2cups water and 1/4 teaspoon PeachDish Salt. Place over high heat. When the liquid comes to a simmer, cover, reduce heat to medium-low and cook until the liquid has been absorbed and grain is tender, 18-20 minutes. Transfer grains to a large bowl, and cool at least 10 minutes.
MISE EN PLACE While grains are cooking, peel and grate sweet potato; measure out 1 1/4 cup, lightly packed (save any extra for another use). Finely chop shiitake mushrooms. Pick and chop oregano and parsley leaves. Select 4 lettuce leaves for sandwich garnish; cut or tear remaining lettuce into bite-size pieces. Split buns.
In a mixing bowl, combine 1 1/4 cup grated sweet potato, half of oregano and parsley, 14 cup (half of) yogurt, cider vinegar and sorghum syrup. Toss to thoroughly combine. Taste and adjust seasoning as desired with PeachDish Salt. Allow to rest while you make grain burgers.
When grain has cooled enough to handle, measure 2 packed cups, and place in a mixing bowl. Add remaining oregano and parsley, remaining yogurt and mushrooms. Mash ingredients together while stirring to combine. Taste and adjust seasoning as desired. Dampen your hands slightly, and form mixture into 4 patties.
Place a large skillet over medium heat, and add 1 teaspoon cooking oil. When the oil is shimmering, add patties (handle them carefully!). Cook with disturbing until browned on the bottom, about 4 minutes. Flip and brown second side, 3-4 minutes more.
While patties cook, toast buns. Place a patty on each bun bottom. Top with a layer of sweet potato slaw, another patty, more slaw, whole lettuce leaves and top bun.
Serve burgers with remaining lettuce dressed with T'Lish dressing, and enjoy!
