METHOD

Prepare your mise en place: Halve tomato crosswise. Thinly slice cucumber. Core, seed, and dice peppers.

Cut a slice from the thickest part of each tomato half to use on the burgers. With the remaining tomato halves, hold the cut side against a grater and gently grate over a medium bowl to collect the juice and pulp (there will be about 1/4 cup); discard the tomato skin.

Whisk vinegar, 1 tablespoon olive oil, honey and 1/4 teaspoon kosher salt into the tomato pulp.

In a medium bowl, toss together salad greens, cucumber, and sweet peppers.

Split buns and toast as desired.

Mix beef and Steak and Brisket seasoning. Divide in half and form two patties, pressing gently to make them slightly thinner in the center.

Place a large sauté pan over medium-high heat. Add burgers. Sear without disturbing until bottom is browned and juices start to bubble through top of burgers, about 2 minutes. Flip and continue cooking until browned on the other side, about 2 minutes more.

Place 1 burger on each bottom bun and top with pimento cheese to taste. Place a tomato slice on each burger.

Drizzle green tomato vinaigrette over the salad and toss to coat.

Serve the warm burgers with salad on the side.
