METHOD

Prepare your mise en place: Cut the bacon into 1/4-inch pieces. Zest lemon, and cut into wedges. Pick and thinly slice the basil leaves. Slice tomato. Split baguettes, but don’t cut all the way through. Pick 4 nice lettuce leaves to set aside whole, and tear or cut remaining lettuce into bite-size pieces.

Place a skillet over medium-low heat. Add bacon. Cook, stirring often, until browned and sizzling, about 8 minutes. If bacon begins to scorch, reduce heat. Transfer bacon to paper towels to drain. Pour rendered bacon fat into a heatproof bowl bowl.Do not wipe out or wash skillet.

Return skillet to medium heat. Add shrimp and stir to coat in the bit of bacon fat left in the skillet. Cook while stirring, until shrimp just turns opaque, about 1 minute. Pour shrimp into a mixing bowl, and let cool for a few minutes.

To shrimp bowl, add bacon, mayonnaise, lemon zest, 1/2 teaspoon PeachDish Seasoning, 1/4 teaspoon black pepper, and basil. Stir gently to coat.

Tuck tomato slices and whole lettuce leaves into baguettes. (You might have leftover tomato.) Divide shrimp salad between the sandwiches.

Dress lettuce pieces and any remaining tomato with Sweet Garlic Dressing as desired.

Serve the sandwiches with salad and lemon wedges on the side. Enjoy!
