Molletes with Black Beans, Tomato & Cotija Cheese
Molletes are Mexican open-faced sandwiches. Made with bread that toasts beautifully while remaining soft around the middle, these sandwiches are ideal for a light, vegetarian supper. The beans, which are the most important players in this dish, are highly seasoned with smoky spices. These are traditionally slathered generously on the bread; any leftovers are great on their own (or save them for breakfast). There are toppings galore for everyone to add as they please.
