METHOD

Heat oven to 350° F. Prepare your mise en place: Chop the chipotle pepper, stir with the adobo sauce and set aside. Rinse and drain beans. Dice tomato, removing stem and seeds. FInely chop green onions. Chop cilantro leaves and stems. Split each ciabatta.

In a large, nonstick skillet set over medium-high heat, heat 1 teaspoon cooking oil. Add beans, 1 cup water, chipotle and adobo sauce, Sandra's Latin Spice Blend and 1/4 teaspoon kosher salt. Cook, stirring, 5 minutes.

Use a fork or potato masher to mash beans into a paste. Keep cooking, stirring often, until they are the consistency of soft mashed potatoes. Taste and adjust seasoning as desired. Lower the heat, and keep warm.

Place bread on a baking sheet, and toast in oven until golden, 8-10 minutes. Spread each loaf with half of beans.

Arrange tomato, green onions, cilantro and cheese at the table. Serve molletes immediately, and top as desired with garnishes. Enjoy!
