METHOD

Prepare your mise en place: Peel the potatoes, and cut into 1-inch pieces. Crush and peel garlic. Pick and chop parsley and thyme leaves. Finely chop chives.

Place the potatoes, garlic and 1 teaspoon kosher salt in a saucepan, and cover with water. Place over high heat. Bring to a boil, then reduce heat to maintain a heavy simmer. Cook 12-15 minutes, or until the potatoes are so tender they can be broken apart with a fork.

Remove and reserve about 1/2 cup potato cooking liquid. Pour potatoes and remaining water through a strainer to drain potatoes.

Place potatoes in a mixing bowl and, using a fork or potato masher, mash potatoes thoroughly to desired smoothness. Stir in butter and buttermilk. Mix in just enough of the reserved cooking liquid to reach your desired consistency.

Stir in parsley, thyme and chives. Taste potatoes and adjust seasoning as desired with kosher salt and freshly ground black pepper.
