METHOD

MISE EN PLACE • Peel potatoes, and cut into 1-inch pieces. • Crush and peel garlic. • Pick and chop parsley and thyme leaves. • Finely chop chives.

• Place a medium saucepan over high heat. Add potatoes, garlic and 1 teaspoon kosher salt, and cover with water. • Bring to a boil, then reduce heat to maintain a heavy simmer. Cook until potatoes are fork-tender, 12-15 minutes.

• Reserve 1/2 cup cooking liquid. • Drain potatoes, and transfer to a mixing bowl.

• Mash potatoes thoroughly to desired smoothness. • Stir in butter and buttermilk. Adjust consistency as desire with cooking liquid.

• Stir in parsley, thyme and chives. • Taste and adjust seasoning as desired with kosher salt and freshly ground black pepper. Enjoy!
