METHOD

Prepare your mise en place: Break apart and crumble tofu into approximately 1/2-inch pieces. Trim and discard ends from green onions, then finely chop white and green parts separately. Pick and chop mint and basil leaves, and combine them. Separate lettuce leaves; try to keep them whole.

In a small bowl combine tofu and You Saucy Thing sauce, stirring well to combine.

Heat a large skillet over medium-high heat. Add 1 teaspoon cooking oil. When the oil is shimmering add onion whites, and cook while stirring until onions just become translucent, about 1 minute. Add tofu to the pan by the handful (squeezing each handful over the bowl to remove excess liquid) in a single layer. (Reserve the bowl of extra liquid.) Cook without turning to brown on the first side, 3-4 minutes. Turn or stir and brown on the second side, 2-3 minutes more.

Stir in sesame oil and reserved tofu liquid. Continue to cook while stirring until most of the liquid has been absorbed or evaporated, about 1-2 minutes more. Remove from heat and stir in herbs and onion greens. Transfer to a serving bowl.

To serve: On a platter or in individual bowls arrange tofu filling, lettuce leaves, Wild Wild East sauce and peanuts. To assemble the wraps, spoon a small scoop of tofu mixture into each lettuce leaf. Drizzle with Wild Wild East sauce. Garnish with crushed peanuts. Wrap 'n' eat!
