Chinese Southern Belle founder Natalie Keng writes, “When my sisters and I were growing up in Georgia, food—and life—were very different. Dad loved hamburgers and Johnny Cash and opened the first Chinese restaurant in the area. Mom was a full-time public schools teacher "Teacher of the Year.” Asian markets weren't around yet. Fortunately, Southern and Chinese food and culture shared similar values and tastes--we’d go fishing and have fried spicy Hunan catfish, stewed beans, turnips, and peanut anything-- boiled peanuts, peanut candy, peanut soup... “The Lettuce Wraps were inspired by spring greens and busy schedules, plus the fact that tofu gets a “bad rap” as mushy and tasteless so this is my tofu “good wrap” converter dish! It’s full of flavor, fresh herbs, and a crunch. You don’t have to be vegetarian to enjoy it!
