Prepare your mise en place: Peel, halve and thinly slice onion. Remove stems from mustard greens and finely chop; thinly slice leaves, and keep them separate from stems. Peel and mince garlic. Cut catfish filet in half lengthwise.
Season catfish on all sides with a total 1/4 teaspoon French Picnic salt.
In a small pot combine milk, 3/4 cup water, macaroni and 1/4 teaspoon French Picnic salt. Place over medium heat. Stir occasionally while the liquid comes to a simmer, then reduce heat to low. Cook, stirring often, until pasta is fully cooked and most of the liquid has been absorbed, about 10 minutes. Remove pot from the heat. Add half of the cheese, and stir until it has fully melted. Stir in remaining cheese and 1 pat butter. If the consistency appears a little too dry, you can stir in a small splash of hot water. Taste and adjust seasoning as desired.
While the pasta is cooking, heat a large sauté pan over medium heat. Add 1 teaspoon cooking oil. When it starts to shimmer, add catfish. Cook without moving until lightly browned on the bottom, 4-5 minutes.
Flip fish and cook until the fish is opaque all the way through, firm to the touch, and browned on the second side, 3-4 minutes more. Remove catfish from pan, and set aside.
Add remaining 1 teaspoon cooking oil to pan. When it starts to shimmer, add onion and mustard green stems. Cook while stirring, until they begin to become translucent, 2-3 minutes. Stir in garlic, mustard leaves and cooking sherry.
Cook until leaves begin to wilt, 1-2 minutes. Season with 1/4 teaspoon French Picnic salt, and cook until the pan is dry, about 1 minutes. Add remaining 1/4 cup water, remove pan from heat, and stir in remaining 1 pat butter. Taste and adjust seasoning as desired.
Divide macaroni and mustard greens between 2 plates. Top with catfish. Enjoy!
