Heat oven to 425° F. Prepare your mise en place: Peel vegetables, and, using a box grater, finely grate enough to create 1 cup (loosely packed). Cut the remaining root vegetables into bite-size pieces. Peel and mince garlic. Pick and chop oregano leaves. Pick and chop parsley leaves.
In a small mixing bowl, combine shaved root vegetables, mayonnaise, vinegar, sugar, chopped parsley and half of the garlic. Stir to thoroughly combine.
On a heavy baking pan, toss together root veg sticks/wedges with 1 teaspoon olive oil, oregano and 1/4 teaspoon salt. Place in oven, and cook until browned at the edges and fully tender, 12-15 minutes.
In another bowl, combine ground pork, remaining 1/4 teaspoon kosher salt, Dry Rub, and remaining garlic. Mix thoroughly, then divide the meat in equal halves, then divide the halves equally again. Form the portioned meat into 1/2-inch-thick patties, 4 to 5 inches inches diameter. Make them slightly thinner at the center than at the edges.
Place a large sauté pan (with a lid) over medium-high heat. Add patties and sear until bottom is browned and hot juices start to rise through the top, 2-3 minutes. Flip patties, and cook 1 minute more.
Heat or toast buns as desired. Place 1 bun on each plate. Assemble burgers with buns, patties, Sweet & Tangy sauce and slaw. Serve roasted vegetables on the side. Enjoy!
