Bloomin' Lasagna

This is a fun and unique vegetarian twist on lasagna.  The Hidden Valley® Original Ranch Dressing perks up all the flavors in the melty cheese and the sauce topping.  Rolling the cheese filling in the noodle stands your typical idea of lasagna on end.

Prepare your mise en place: Chop baby spinach leaves. Trim root end from lettuce heads. Gently tear or cut lettuce leaves into bite-size pieces.
Fill a large pot with 8 cups water. Stir in 2 tablespoons kosher salt, and place over high heat. When water comes to a rapid boil, add lasagna noodles and cook, stirring occasionally, 8-9 minutes, or until just tender but not mushy. Drain well, toss with olive oil, and set aside.
Pour 1 cup sauce into a greased, shallow casserole dish at least 10 inches in diameter (a glass pie dish works perfectly). Set aside.
In a mixing bowl combine spinach, ricotta, mozzarella, 2 tablespoons Hidden Valley® Original Ranch® Dressing, nutmeg and pepper.
To assemble “blooms,” spread about 2 tablespoons cheese mixture on each noodle, and roll it up. Place blooms, curly side up, in the casserole dish. In a small bowl mix 1/2 cup pasta sauce with remaining 2 tablespoons dressing. Drizzle over each bloom. Cover dish gently with foil, and bake 30 minutes, or until heated all the way through.
In a large bowl, combine lettuce leaves with Parmesan, and dress with Hidden Valley® Original Ranch® Dressing. Serve salad alongside Bloomin’ Lasagna. Enjoy!
