Spotted Trotter Beef & Pork Kielbasa with Potatoes and Cabbage

We try not to play favorites when it comes to ingredients, but the beef and pork kielbasa from Spotted Trotter sometimes makes that challenging. The kielbasa is richly flavorful and slightly spicy. This soup pairs hearty, buttery potatoes with tender, slightly sweet cabbage in a salty, savory, oregano-infused broth.

METHOD

Cut sausage on the bias (at an angle) into 1/2” thick slices. Cut the onion into 3/4” dice; potato into 3/4” dice; celery in 1/4” thick slices on the bias; finely shred the cabbage, and chop the organo.

Heat a large pot (with a lid) over medium-high heat. Add the oil, when it smokes add the sausage in a single layer, and brown without stirring for 1-2 minutes. Turn and brown 1-2 minutes more. Remove the meat and set aside.

Stir in onions, then potatoes. Spread them in an even layer and let brown for 1-2 minutes, then stir in the celery, browned sausage, Braggs aminos, mustard, and PeachDish salt.

Sprinkle on the oregano, and top with cabbage. Add 2 cups of water, and bring to the boil. Reduce heat to a simmer, and cover the pot. Cook for 10 minutes.

Uncover, stir to combine, taste and adjust seasoning.
