Season both sides of each chicken breast with a total 1/4 teaspoon PeachDish Salt, and set aside at room temperature. Prepare your mise en place: Remove husk and silk from corn cob, and place the cob flat on a cutting board. Using a large, sharp knife, slice down one side of the ear, cutting away the kernels close to the cob. Turn the ear and repeat, until all the kernels are removed. Halve cucumbers lengthwise; cut crosswise into 1/4-inch slices. Quarter tomatoes. Trim ends from squash, then cut squash into 1/2-inch cubes. Halve peppers, remove stem and seeds, and cut flesh into 1/2-inch slices. Finely chop chives. Cut or tear lettuce leaves into bite-size pieces.
Place eggs in a small saucepan, cover with cold water, and add 1 tablespoon kosher salt. Place on high heat. When water comes to a full rolling boil, set a timer for 2 minutes for a soft-boiled eggs (or 5 minutes for hard-boiled). When timer sounds, drain water off eggs, and cover them with ice, 1 teaspoon kosher salt and more water. Let eggs remain in ice to cool.
While eggs are cooking, place a skillet over medium-high heat. Add 1 teaspoon olive oil. When the oil is shimmering add chicken breasts. Cook without turning or stirring until browned on the bottom, 3-4 minutes. Flip and continue cooking until the chicken is opaque all the way through, firm to the touch and browned on the second side, 2-3 minutes more.
Rinse and wipe out skillet, then place over medium heat. Add peanuts. Cook, stirring constantly, until peanuts have started to toast and brown, 2-3 minutes. Immediately remove peanuts to a bowl, and stir in remaining 1 teaspoon olive oil, PeachDish Seasoning and 1/4 teaspoon PeachDish Salt.
Peel eggs, and cut into wedges or halves.
Cut chicken breasts into 1/2 inch pieces, or thinly slice across the grain.
Place lettuce in a large shallow bowl or plate. Arrange corn kernels, cucumber, tomato, squash, pepper, chives, chicken, eggs and peanuts on top. Drizzle with T-Lish Sweet Garlic Vinaigrette.
