Hanger Steak Fajitas with Radish, Lime & Cotija Cheese
Faja is Spanish for “belt,” and the skirt steak is a long, thin strip of meat that runs along the middle of a cow like a belt. The hanger steak also rides on the inside of the cow’s ribs, and is easy to remove from a freshly slaughtered side of beef. It is astonishingly flavorful but quite chewy — unless you cut it thinly against the grain into little strips (fajitas!) so that it yields easily to the bite.
