METHOD

Prepare your mise en place: Peel apple, and cut into quarters through the stem end. Place each quarter flat on a cutting board and cut at an angle to remove the core and seeds. Thinly slice each quarter. Halve and thinly slice radishes. Peel carrot, trim away ends, halve lengthwise and thinly slice crosswise. Peel, halve and thinly slice shallot.

In a small saucepan combine shallot, raisins, 2 tablespoons olive oil, 1 tablespoon sherry vinegar, 2 tablespoons water, honey and 1/4 teaspoon Friends Forever salt. Place pan over medium heat, and bring to simmer, stirring intermittently. Remove from heat.

While dressing heats, in a large mixing bowl combine apple, carrot and radish. Carefully pour the warm vinaigrette mixture over the contents of bowl. Mix thoroughly, and allow to cool 5 minutes.

To apple mixture add arugula and pepitas. Toss well, taste and adjust seasoning as desired with Friends Forever salt.

Divide salad between 2 plates. Top with feta, and enjoy!
