Olive oil, as needed*, 12 ounces smoked beef kielbasa, 3 ounces onion, sliced , thinly, (about 3/4 cups , sliced, or 1 small onion) ,1 clove garlic, sliced , thinly, minced, or , crushed (about 1 tsp , minced), 6 ounces bell peppers, , seeded and sliced (about , 1 1/2 cups sliced), Salt, to taste* , Black pepper, to taste*, 4 leaves fresh basil, torn , or cut into small pieces, 12 leaves fresh oregano, torn or cut into small pieces, 2 ciabatta rolls,

1. Heat a large skillet over medium heat, add a small amount of olive oil, and place the sausage in the pan. Brown on all sides. Remove from skillet to a plate or rimmed dish.
2. Add olive oil as needed to add to the rendered sausage fat, and lightly coat the pan. Stir in the onion, and garlic, and cook 2 to 3 minutes. Add sliced peppers. Season with salt, pepper. Continue to cook, while stirring occasionally, until peppers and onions are tender. While the peppers, garlic and onion cook, and once the sausage has cooled for at least 5 minutes, cut into 1/2 inch thick slices, do your best to save all of the resting juices from the sausages.
3. Reduce heat to low. Return sausage slices and juices to skillet with the peppers, onion, and garlic to heat through. Add the fresh herbs. Serve with or on warm ciabatta and enjoy!

Helpful Tips & Notes:
-Total cook time for this recipe should be about 20-45 minutes, depending on your comfort and speed with a knife. You can either prep and cut the vegetables in advance, or while the sausage is browning.
-The sausage is already fully cooked, so there is no concern over doneness.
-If your ciabatta has staled slightly before you had a chance to cook the meal; thoroughly dampen a paper towel(s), and ring dry until it is only slightly damp. Wrap the bread fully in dampened paper towel and microwave on high for 10-15 seconds. You can then either serve the bread as is, or toast as desired.
-The most efficient way to seed & slice a bell pepper is to place the pepper stem end (top) down on your cutting board, and cut in half starting at the flower end (top), until you reach the seed core. Then, remove the knife and pull the pepper apart the rest of the way. The seed core should stay with one half, pull it out, along with any remaining seeds or white ‘ribs’ and discard. Next, with the skin side down, start on the flower end of each half, slicing thinly perpendicular to your first cut.
