Wine Pairings for the Week of August 15th, 2016

Each week, Wine Specialist Sarah Pierre brings you suggestions to complement your PeachDish meals. Sarah is one of the owners at 3 Parks Wine Shop in Glenwood Park, Atlanta. She paired up with the team of The Shed at Glenwood and The Pig and The Pearl and opened 3 Parks in 2013. Prior to opening the store, she spent most of her career working and managing notable restaurants in Atlanta and New York City. Sarah selects all of the wines that are offered at 3 Parks Wine Shop and also assists in pairing wines for local events and dinners throughout Atlanta.

Corn, Red Bean, & Okra Gumbo

Corn, Red Bean & Okra Gumbo

Pinot Noir - When pairing spicy dishes with wine, select young wines, minimal to no oak, and moderately lower in alcohol. This hearty, meatless gumbo won't be extremely spicy, so any Pinot Noir will work. Suggestion: 2012 Bethel Heights Pinot Noir, Oregon

Rosé d’Anjou - An off-dry Rosé - specifically from Anjou region in the Loire Valley. These wines are excellent with spicy and/or Cajun-style dishes. Suggestion: Remy Pannier Rosé d’Anjou

Pork Meatballs with Succotash

Pork Meatballs with Snap Bean Succotash

Chardonnay - Both oaked and unoaked Chardonnay. Trust me- corn and Chardonnay just work! Unoaked, lighter and more acidic, with more obvious fruit notes, or the richer, rounder, toasty, oaked Chardonnay - both will pair well with the sweet corn and bean succotash. Suggestion: Boschendal Chardonnay/Pinot Noir, Stellenbosch, South Africa

Summer Beans with Mushrooms and Barley

Summer Beans with Mushrooms & Herbed Barley

Pinot Noir - Preferably a French Pinot Noir. This Peachdish is full of flavor, but can easily be overpowered with a full bodied red. A glass of red Burgundy will complement this earthy dish loaded with herbs and spices. Suggestion: Louis Chevallier Bourgogne Pinot Noir, Burgundy, France

Chicken Pita

Chicken Pita Sandwiches with Bulgur Pilaf

Albarino - A glass of this Spanish white, Albarino, will have a nice pop of citrus and lemon. Perfectly acidic and a fresh complement to the sandwich. Suggestion: Ramon Bilbao Albariño, Rias Baixas, Spain

Eggplant Provencal with Saffron Rice

Eggplant Provencal with Tomatoes, Peppers & Saffron Rice

Chianti - Stay true to the saying “acid loves acid” when pairing wine with this dish. Tomatoes are high in acid and so is Chianti. Sauteed eggplant, aka melanzana in Italian, also pairs well with Chianti. Suggestion: Melini, Chianti DOCG, Tuscany, Italy

Summer Harvest Rainbow Roll with Once Again Sun Butter Dipping Sauce

Summer Harvest Rainbow Roll

Oregon Pinot Noir - The ever so versatile Pinot Noir will pair perfectly with these rainbow rolls. The earthiness of an Oregon Pinot will work nicely with the vegetables. Suggestion: Love Oregon, Willamette Valley, Oregon

Tomato Pie with Vidalia Onion and Herbed Chicken Breast

Tomato Pie with Vidalia Onion & Herbed Chicken Breast

Italian Pinot Grigio- Pair tomato pie with a crisp and acidic Pinot Grigio. The wine will hold its own to the acidity in the tomatoes and showcase the true flavors of the dish. Suggestion: Ornella Molon Pinot Grigio, Venezia DOC, Italy
